It seems to me that springtime teases us with a handful of produce before the big bounty of summer kicks in. But the good news is that some of our all-time favorite fruits and veggies are in season in spring! So don't forget to enjoy them every chance you get.

Lamb Stew with Orange

Episode: One Pot Cooking
2 tablespoons olive oil
1 pound lamb cubes (lean, from leg and shoulder)
1/4 teaspoon salt
Pinch ground black pepper
1 medium onion, diced
2 large cloves garlic, minced

I knew that acupunture is very helpful for pain management after surgery. But I didn't know it is that amazing!

My husband had a hernia surgery about 6 months ago and his belly was black and blue with bruises the next day! It hurt me seeing him go through the post-surgery pains. So I took him in to see Dr Ping on the third day of his surgery.

The next morning his bruises were half gone! And his pains were not as strong as the day before. Another acupuncture treatment later, his bruises were about 95% gone, just a small light yellowish spot around the belly button. He got his energy back, too.

One big ripe organic mango, peeled, pitted and cut into about 1 inch cube
1/3 lb cooked shrimp, get rid of the tail and halve
½ cup of organic cherry tomatoes
1 avocado, peeled, pitted and cut into 1 inch cube
one bunch of fresh cilantro, chopped finely
2 tablespoon of fresh lemon/lime juice

Mix mango cubes, shrimp, cherry tomatoes and finely chopped cilantro together with a teaspoon extra virgin olive oil, 2 tablespoon lemon/lime juice, then add in the avocado cubes, a sprinkle of cayenne pepper powder, and salt to taste.
