There's nothing more confusing than carbohydrates. There're so many advices and scientific experiments such as this by experts and fad diets, some tells carbs are bad, others say a % in your diet is necessary, yet others want you to eat a pure carb diet (such as vegan diet). For example, the Mayo Clinic diet requires you to eat 45-65% carbs, while the Atkins diet is totally against carbs. I ran into a well known nutritionist and body builder, who frequently appears on magazines, TV shows, and newspapers. He told me that a recent great discovery of his is to totally avoid carbs, and that he'd make it a diet. "Wait, let's not create another fad diet," thought I as we talked. What I wondered is that why not a single "expert" talks about THE WAY CARBOHYDRATES ARE EATEN. Here's a paragraph quoted from Dr. Taichi Tzu and Dr. Ping Wu's book, Asian Longevity Secrets: "One good example is starch. The starch in raw food is stored in hard, compact granules, which are difficult to digest quickly. During cooking at high temperatures, water and heat cause the starch granules to expand, burst, and free up individual molecules. This is how gravy is made -- by heating flour and water until the starch granules burst and the gravy thickens. Cooking starchy food makes it much easier and faster to digest, but this also creates challenges for the body." When carbohydrates are cooked, it becomes very similar to simple sugar digestion. So I always tell people, when you eat a bowl of rice, or a slice of bread, think of in fact eating pure sugar! Carbohydrates are necessary in any true healthy diet. Here's the definition of carbs from Wikipedia:
"Carbohydrates (from 'hydrates of carbon') or saccharides (Greek σάκχαρον meaning "sugar") are the most abundant of the four major classes of biomolecules, which also include proteins, lipids and nucleic acids. They fill numerous roles in living things, such as the storage and transport of energy (starch, glycogen) and structural components (cellulose in plants, chitin in animals). Additionally, carbohydrates and their derivatives play major roles in the working process of the immune system, fertilization, pathogenesis, blood clotting, and development."
In YBM Diet, we eat a balanced diet, with a good proportion of RAW CARBOHYDRATES. For example, if you soak a few of tea spoons of chia seeds in raw milk for 10 minutes, you'll find that it becomes soft and delicious to eat. You may also try to eat sweet potatoes raw by taking the skin off, or corns raw. Not only they are delicious, but also, you'll find you eat much slower and eat much less naturally as compared to eating the same things cooked. Nature requires you to shew raw foods for a long time before you send them over to your digestive tract. This is the healthiest way of eating, naturally given by God! In summary, the fundamental misunderstanding about carbohydrates by the experts, researchers, scientists, gurus, press, lies in the fact they only talk about carbs as a food components, rather how we process or cook it when we eat. Because of this poor understanding of this fundamental concept, good becomes bad, and bad is good, causing a lot of confusion. I hope this article helps clarify your mind.
