One big ripe organic mango, peeled, pitted and cut into about 1 inch cube
1/3 lb cooked shrimp, get rid of the tail and halve
½ cup of organic cherry tomatoes
1 avocado, peeled, pitted and cut into 1 inch cube
one bunch of fresh cilantro, chopped finely
2 tablespoon of fresh lemon/lime juice

Mix mango cubes, shrimp, cherry tomatoes and finely chopped cilantro together with a teaspoon extra virgin olive oil, 2 tablespoon lemon/lime juice, then add in the avocado cubes, a sprinkle of cayenne pepper powder, and salt to taste.
It could yield for 3 servings.

it is a bit different

the original recipe called for red onion, which I don't like the after taste very much. And I add cherry tomatoes to enrich the flavor and color. Cilantro is optional.

I made the salad during a family reunion dinner in July and it was a big hit that night!

sounds delicious

This sounds great. I'll try it. Maybe a little more modification to make it even healthier should be to eliminate salt and oil. The taste then will be sweet sour due to mango and lime.
